Description
Dacastello Bardolino DOC is a classic, easy‑drinking red wine from the eastern shore of Lake Garda, in the Verona province of Veneto, northern Italy. Protected by the Lessini Mountains and cooled by the lake breeze, this region enjoys a mild climate and well‑drained calcareous‑gravel soils—ideal conditions for the traditional local grape varieties: Corvina, Rondinella and Molinara. These combine to create a wine that is bright, fragrant and perfectly balanced, fully representing the authentic style of the area.
Made from a carefully balanced blend of Corvina, Rondinella and Molinara grapes, harvested in late September when acidity and ripeness are in perfect harmony. After gentle crushing, fermentation takes place in temperature‑controlled stainless steel tanks at 22–26 °C, with short skin maceration of only 6–8 days to preserve freshness and avoid heavy tannins. The wine then rests for several months in steel vats to refine its harmony before bottling, ready to be enjoyed young.
It shows a brilliant, lively ruby‑red colour with delicate violet reflections. The nose offers fresh scents of sour cherry, wild strawberry, red plum and subtle floral hints of violet. On the palate it is light‑bodied, smooth and very fresh, with bright acidity and soft tannins leading to a clean, dry finish. Alcohol content is around 12% vol, best served slightly chilled at 15–17 °C.
It is extremely versatile at the table: perfect with simple pasta and tomato sauces, wood‑fired pizza, risottos, grilled white and red meats, poultry, cured meats, fresh cheeses and light antipasti.
