Description
Dacastello Solechet Merlot Puglia IGT is a smooth, approachable red wine produced in the warm, sun‑rich region of Puglia in southern Italy. This area benefits from long sunny days, gentle sea breezes and clay‑limestone soils that give the grapes perfect ripeness, allowing Merlot to express its signature softness and generous fruit character. Classified as IGT, it guarantees its origin and quality, combining international grape style with the warm, welcoming character of Apulian terroir.
Made exclusively from carefully selected 100% Merlot grapes, harvested in early October when the fruit reaches the ideal balance of sugar, acidity and soft tannins. After gentle processing, fermentation takes place in temperature‑controlled stainless steel tanks at 24–27 °C, preserving the fresh, fruity aromas. Maceration lasts 8–10 days, extracting just enough colour and tannins to keep the wine smooth and easy‑drinking. It then rests for several months in steel vats to refine its balance before bottling.
In the glass it shows a bright, deep ruby‑red colour with delicate violet hints. On the nose it opens with inviting notes of ripe black cherry, plum, blackberry, followed by soft hints of vanilla, sweet spices and a light floral touch. On the palate it is medium‑bodied, round and velvety, with very soft tannins and well‑balanced acidity, leading to a smooth, pleasant finish. Alcohol content is around 13% vol, best served at 16–18 °C.
It is wonderfully versatile: perfect with pasta with tomato or meat sauces, wood‑fired pizza, risottos, grilled red and white meats, roast pork, poultry, cured meats and fresh or medium‑aged cheeses such as Asiago, Provolone and mild Pecorino.
