Description
Dacastello Shiraz Terre Siciliane IGT is a bold, generous and aromatic red wine produced on the sun‑drenched island of Sicily, in southern Italy. This extraordinary terroir enjoys long, warm summers, plenty of bright sunshine, refreshing sea breezes and soils rich in minerals, limestone and volcanic deposits—conditions that allow the Shiraz grape to ripen fully, developing intense flavours and a well‑balanced structure. Classified as IGT, this wine guarantees its geographical origin and quality, blending the classic character of Shiraz with the unique warmth and richness of the Sicilian land.
Made exclusively from carefully selected 100% Shiraz grapes, harvested in early October when the fruit reaches perfect phenolic ripeness, balancing concentrated sugars, bright natural acidity and soft, ripe tannins. After gentle destemming and crushing, fermentation takes place in temperature‑controlled stainless steel tanks at 25–29 °C, preserving the grape’s rich primary aromas. Maceration on the skins lasts for 12–15 days, extracting the deep colour, intense fruit and soft tannins that give the wine its full, rounded body. It then matures for several months in stainless steel and large neutral oak vats, refining its harmony and softening its structure before bottling.
Visually, it shows an intense, deep ruby‑red colour with bright violet hues that slowly turn to garnet as it ages. On the nose, it offers a powerful, complex bouquet of ripe blackberry, plum, black cherry and dried fruit, complemented by classic notes of black pepper, dark chocolate, sweet spices, a hint of tobacco and a subtle mineral touch typical of Sicilian soils. On the palate, it is full‑bodied, smooth and well‑structured, with velvety tannins and good freshness that keep it balanced and drinkable. The flavours mirror the nose perfectly, leading to a long, warm and satisfying finish. With an alcohol content of around 14% by volume, it is best served at 18–20 °C to fully express its rich aromas and character.
This Shiraz pairs beautifully with hearty, flavourful dishes: rich pasta with meat ragù, truffle or mushroom sauces, baked pasta and savoury risottos. It is ideal with grilled and roasted red meats, beef, lamb, game, sausages and slow‑cooked stews and braised dishes. It also goes wonderfully with cured meats, salami and aged cheeses such as Pecorino, Provolone, Caciocavallo and Parmigiano‑Reggiano, as well as with slightly spicy dishes and rich meat‑based main courses.
