Description
Dacastello Milò Grand Rosé Millesimato Extra Dry is an elegant, refreshing sparkling rosé wine produced in the sunny plains of Puglia, southern Italy. Benefiting from long warm days, gentle sea breezes and mineral‑rich clay‑limestone soils, this terroir allows red grapes to ripen fully while retaining bright natural acidity and delicate aromas. Made using the Charmat method for secondary fermentation, it preserves the fresh, fruity character of the fruit, resulting in a wine that is lively, aromatic and perfectly balanced. As a millesimato, it is produced from grapes harvested in a single favourable vintage, ensuring consistent quality and distinctive character.
Crafted from a careful selection of local red grapes, the harvest takes place in early September, when the fruit reaches the ideal balance of ripeness and freshness. After gentle pressing with very short skin contact, only the free‑run juice is used to obtain its delicate pink hue. The base wine undergoes primary fermentation in temperature‑controlled stainless steel tanks, followed by a second fermentation in sealed pressurised tanks to develop its fine, persistent bubbles. The process is carefully managed to preserve the bright primary aromas and natural freshness, resulting in an Extra Dry style—pleasantly fruity with just a hint of sweetness, well balanced by lively acidity.
In appearance, it shows a brilliant, delicate salmon‑pink colour with fine, persistent bubbles that form a lasting mousse. On the nose, it offers a fresh and inviting bouquet dominated by notes of wild strawberry, raspberry, redcurrant and citrus zest, complemented by subtle floral hints of rose and a touch of white peach. On the palate, it is light‑bodied, crisp and refreshing, with a pleasant softness typical of the Extra Dry style, lively acidity and a clean, fruity finish. With an alcohol content of around 11.5% by volume, it is best served well chilled at 6–8 °C to fully enhance its freshness and aromatic expression.
This versatile sparkling rosé is ideal for many occasions: perfect as an aperitif to stimulate the appetite, it pairs beautifully with seafood dishes such as grilled fish, prawns, shellfish and seafood risotto, as well as light pasta with vegetable or delicate tomato sauces, fresh salads, white meats and poultry. It also complements fresh and mild cheeses, soft antipasti, fruit desserts and light pastries, making it a wonderful choice for casual meals, celebrations and social gatherings alike.
