Nero d’Avola Appassimento Sicilia DOC is a rich, intense and uniquely structured red wine produced in the sun‑drenched island of Sicily, the largest and most iconic wine‑growing region in southern Italy. Blessed with a warm Mediterranean climate, long hours of bright sunshine, cooling sea breezes and varied soils ranging from limestone and clay to volcanic deposits, Sicily offers the perfect environment for the Nero d’Avola grape, the island’s most famous native red variety. This wine is crafted using the special Appassimento method: grapes are carefully selected and left to dry naturally for several weeks after harvest, concentrating their sugars, aromas and flavours while maintaining a fresh acidity. Classified under the DOC designation, it adheres to strict production standards that guarantee its origin, authenticity and high quality, resulting in a wine that captures the warmth, character and tradition of Sicilian winemaking.
Made exclusively from 100% Nero d’Avola grapes, the production process begins with the harvest in early October, when the fruit reaches full ripeness. Instead of being pressed immediately, the best bunches are laid out in well‑ventilated rooms or on drying racks for 30 to 40 days, allowing a portion of the water content to evaporate. This natural drying process concentrates the fruit’s natural sugars, aromatic compounds and phenolic substances, giving the wine its signature richness and depth. Once dried, the grapes are gently crushed and fermented slowly in temperature‑controlled stainless steel tanks at 24–28 °C. Maceration on the skins lasts for 12–15 days, extracting deep colour, soft yet firm tannins and intense fruit flavours. After fermentation, the wine matures for several months in stainless steel or large neutral oak vats to refine its balance and smooth its structure, before being bottled ready to express its full, generous personality.
Visually, it displays an intense, deep ruby‑red colour with striking violet reflections that slowly develop into warm garnet hues as it ages. On the nose, it offers an abundant, complex and inviting bouquet dominated by ripe and concentrated dark fruit: black cherry, plum, blackberry, dried fig and sweet raisin, beautifully complemented by notes of ripe jam, sweet spices, vanilla, dark chocolate, a hint of Mediterranean herbs and a subtle mineral touch typical of Sicilian soils. On the palate, it is full‑bodied, smooth and wonderfully rounded, with velvety tannins and a well‑balanced acidity that prevents it from feeling heavy or cloying. The flavours mirror the nose perfectly, with concentrated sweet dark fruit, spicy notes and a pleasant warmth leading to a long, persistent and satisfying finish. With an alcohol content of approximately 14–14.5% by volume, it is a generous and distinctive wine, enjoyable young but also capable of developing greater complexity and softer notes for 4–6 years when stored properly in a cool, dark place. It is best served at 17–19 °C to fully bring out its rich aromas and smooth texture.

Its rich, concentrated character makes it a natural match for hearty pasta dishes with meat ragù, tomato sauces, roasted vegetables or truffle, as well as savoury risottos and baked pasta. It complements grilled and roasted red meats, beef, lamb, pork, game, sausages and slow‑cooked stews and braised dishes, standing up perfectly to their bold and savoury flavours. It also pairs beautifully with cured meats, salami, prosciutto and mixed antipasti, as well as with medium‑aged and mature cheeses such as Pecorino, Provolone, aged Caciocavallo, Parmigiano‑Reggiano and mild blue cheeses. Its gentle sweetness and soft tannins also make it a wonderful companion for slightly spicy dishes and rich meat‑based main courses, offering great versatility and a unique, enjoyable character at the table.
