Dacastello Prosecco Superiore Extra Dry Millesimato DOC is an exceptional vintage sparkling wine produced in the heart of the Prosecco Superiore area, among the rolling hills of Conegliano and Valdobbiadene in the Veneto region of northeastern Italy. This territory, recognized for its unique microclimate, sun‑drenched slopes, and calcareous‑clay soils, represents the historic birthplace of Prosecco and offers ideal conditions for growing the Glera grape variety, which has been cultivated here for centuries. Made exclusively from 100% hand‑harvested Glera grapes, the winemaking process begins with a careful selection of bunches during the early autumn harvest. Only fully ripe, healthy fruit is chosen, ensuring that the wine retains all the natural freshness and aromatic intensity typical of the variety. The grapes are gently pressed to extract the clear juice, which then undergoes the first fermentation in temperature‑controlled stainless steel tanks. This method allows the wine to preserve its delicate floral and fruity characteristics without the influence of wood, resulting in a pure, vibrant, and authentic profile.
Following the traditional Charmat method—the most suitable technique for preserving the primary aromas of Glera—the second fermentation, responsible for creating the fine bubbles, takes place in large, sealed pressurized tanks over a period of several weeks. This slow, controlled process ensures that the carbon dioxide dissolves gently into the wine, producing a persistent and refined perlage rather than large, aggressive bubbles. The wine is classified as Extra Dry, meaning it has a subtle hint of natural sweetness balanced perfectly with bright acidity, making it more versatile than fully dry styles while remaining fresh, light, and extremely easy to drink.
